cubieOsmanthus Poached Pears

Cubie function: Stew
Preparation time: 20 mins
Cooking time: 3 hours
5-6 servings

Ingredients
10gm dried snow fungus
2 Chinese pears dried
4 tsp Osmanthus flower dried
5 pitted red dates dried
5 honey dates
1 tsp Chinese sweet almond
1 tsp Chinese bitter almond
20-30gm rock sugar
1.3l water

Method
1. Soak dried white fungus in water for at least 15 minutes until they swell up. Remove the hard, yellow part at the bottom. Cut into bite-sized pieces.
2. Peel pears, remove core and cut into wedges or large bite-sized pieces.
3. Place all the ingredients into a casserole pot.
4. Cook on Stew mode for 3 hours. Serve warm or cold.

Ingredients
1 spring chicken, around 800-900 gm
4 red dates, halved and pitted
2 fresh Korean ginseng roots
4 garlic cloves
100gm glutinous rice, soak in water for at least 1 hour
2 tsp salt
1.2l hot boiling water
1 stalk spring onion, sliced, for garnishing

Method
1. Clean chicken, remove excess fat inside chicken cavity and pat dry. Stuff the glutinous rice (reserving 1 tbsp) and half the Korean ginseng, red dates and garlic cloves into chicken cavity. Seal opening with toothpick.
2. Place chicken into a ceramic pot. Add the remaining glutinous rice, ginseng, red dates and garlic together with salt and water.
3. Cook on Stew mode for 3 hours. Add sliced spring onion and serve hot.
Tip: Serve with extra salt and pepper on the side, or with a dip of salt, pepper and sesame oil.
