Salmon is the fish you go to when trying to change a professed seafood hater’s mind. It tastes far less “fishy” than other types and has a denser texture. And think about the health benefits!

Sweet and sour seared salmon fillets

400g salmon fillet
4 tbsp sweet-and-sour sauce
2 avocados
1 red onion
2 tbsp oil
2 tbsp white-wine vinegar
salt and pepper
half a baguette
100g herb butter

Cut baguette in thin slices and smear with herb butter. Place slices in a oven preheated to 200°C for 10 minutes and bake until golden brown.

Halve avocados, remove pit, then scoop out flesh and dice into cubes. Place diced avocados in a bowl.

Split salmon fillet into two portions and brush with sweet and sour sauce. Peel and finely chop onion. Heat oil in a nonstick pan and add onions. Cook onions until softened, then remove from pan and allow to cool.

Mix cooled onion with vinegar and add to avocados. Add salt and pepper to taste.

Put salmon in the hot pan and saute all sides at high heat. Reduce heat and allow salmon to cook through. Serve fillets with avocado-onion salad and bread chips on the side. – dpa/Mareike Winter
