HONEY CITRUS SHERBET
1 orange, peeled and seeded
1 lemon, peeled and seeded
1/2 grapefruit, peeled and seeded
100g honey, or to taste
100g ice cubes
Quarter the fruits and cut into thin slices. Put them into a jar with the honey and macerate overnight in the fridge. Pour into an ice cube tray and freeze. Place the frozen fruit and honey cubes and the ice cubes into the blender. Blend on FROZEN mode to a sherbet.
1 cup sour cream
1/3 cup buttermilk
2 tbsp crumbled blue cheese
1/4 tsp celery seeds
1 tsp hot sauce
4 tbsp chopped spring onion
Combine sour cream, buttermilk, blue cheese and celery seeds in the blender. Select PUREE mode and blend until creamy, adding hot sauce and spring onion to taste. Garnish with spring onion and a drizzle of hot sauce.
CREAMY TOMATO SOUP
8-10 Roma tomatoes
1 medium onion, peeled and diced
6 basil leaves
3 garlic cloves
3 tbsp olive oil
1/2 cup heavy cream
Place tomatoes, onion, basil and garlic in the blender. Add oil and blend using SOUP mode. Pour into a large saucepan and warm over medium heat for 15 minutes. Before serving, add heavy cream. Serve with garlic toast.
