Grilled Prawns With Garlic Butter Dipping Sauce
1 kg (28-30) prawns, with shells and heads intact, deveined
5 tbsp garlic powder
1 tbsp cayenne pepper powder
1 tbsp paprika powder
3 tbsp brown sugar
1 tbsp chilli flakes
Salt and black pepper to taste
Garlic butter dipping sauce
3 cloves garlic, minced
1 tbsp lemon juice
Salt and pepper to taste
To prepare prawns
Place the prawns in a large bowl and coat with olive oil.
Combine the garlic, cayenne and paprika powders, brown sugar, chilli flakes, salt and pepper in a separate bowl.
Adjust the mix to your liking – you’re looking for a marinade rub that is at once garlicky, sweet, spicy and with enough salt.
Add the mixture to the prawns to coat them evenly. Chill for at least two hours.
Before cooking, allow the prawns to come to room temperature.
Grill the prawns on high heat for 2-3 minutes on each side.
To make dipping sauce
Add the butter and garlic into a pan over low heat.
Stir occasionally, allowing the garlic to infuse for 3-4 minutes.
Add the lemon juice, and season with salt and pepper.
Serve with the grilled prawns.
